These prawns are quite flavoursome and simple to prepare and bake. The only tricky part is keeping an eye on them in the oven as they literally only take about 6-8 minutes to cook through. Good quality fresh prawns will really enhance the flavours and make the dish taste delicious.
Baked Prawns, serves 2-3
Preparation Time : 30 minutes
Baking Time : 6-8 minutes
– 300g + raw king prawns/tiger prawns, butterflied
– 2 tbsp olive oil
– 2 garlic cloves, crushed
– Salt and Pepper
– Juice or half a fresh lemon
First prepare the prawns (I used fresh tiger prawns). Rinse them under cold water and de-head and peel if preferred (retains more flavour with head though I find). Butterfly them by cutting them lengthways across the back of the prawn (not all the way through though) and remove the dark coloured vein. Put them to one side.
Then add the marinade ingredients, crushed garlic, basil, parsley, salt and pepper and the juice of half a lemon. Pour this over the prawns and mix in thoroughly. Transfer to a baking dish and bake at 220 degrees Celsius for 6-8 minutes until pink. I think this would make a good starter dish served with some crusty bread or equally the volume could be doubled for more people.
